2018 Pas de Chat Southern Oregon Pinot Noir
This eclectic estate blend of Pinot Noir opens with dense notes of damp soil, mushrooms, and cocoa powder. The earthiness rides into the palate, again with a mushroom characteristic, but brings along bold black fruit, blueberry, and a very succinct acid profile. The established flavor profile continues through the lengthy finish; however, the acid and tannin play off each other incredibly well and create a nervous tension that is quite unique and enjoyable. This is a wine that is tasting excellent now, but given time, will continue to soften and shine even brighter.
